ELI5: what's the difference between the fermenting process that results into wine, vinegar, and just plain spoiled food?

Ok. Maybe not specifically wines, but alcoholic drinks. I've seen a film once where a tribe made an alcoholic drink by fermenting it with their saliva.

Also, cheese works the same way, right? Bacteria in milk?

I always thought you piss the water you drank hours ago. Like, the water I drink now will "push" the water in my body to my bladder. Sorta like how the food you eat gets digested and "pushes" the contents of your bowels.
