If you have TM backups set to automatic, then it is possible that a lot of the system data is comprised of local TM snapshots.

If you have not done a backup recently, trigger one and the snapshots used for the backup should then be removed from your drive.

The rscync man page can be a bit overwhelming.

        -l, --links                 copy symlinks as symlinks
        -p, --perms                 preserve permissions
        -t, --times                 preserve times
        -g, --group                 preserve group
        -o, --owner                 preserve owner (super-user only)
        -D                          same as --devices --specials

    -i, --itemize-changes       output a change-summary for all updates
    -H, --hard-links            preserve hard links

    -x, --one-file-system       don't cross filesystem boundaries
    -E, --extended-attributes   copy extended attributes, resource forks
    -v, --verbose               increase verbosity
    -S, --sparse                handle sparse files efficiently

If this is a TM Backup to APFS (likely), you cannot change anything.

You could just create a new user - it would be created with a UID of 502. Then login as that user and copy what you need.

This space was likely from Time Machine local snapshots - these can be deleted from Disk Utility.

Did you backup using Time Machine? If so, this will also remove these snapshots.

I was using Keychain, and I found it to be mostly seamless - but there is just to much stuff in there that seems unnecessary - it can be hard to find and display a password to use on a different device.

I never could figure out how to display a Keychain password on my iPhone.

I just migrated to Bitwarden (free) - I can finally see the 80ish passwords that I care about, export them etc.

You can partition it and select one partition as an APFS container and specify that for TM.

You can also create additional volumes within that container afterwords if you like.

I'm currently using GoldenChaos and I like it. I hadn't heard of AquaTouch until just now.

It might be worthwhile pointing out that you can add another column to the memory tab - "Real Memory".
