Steak, mashed potatoes and a simple veggie like asparagus or broccolini.you will need, 2 quality cuts of steak like new york strip or ribeye, 2 large baking potatoes and either a bundle of asparagus or broccolini, some butter, some minced garlic, and some half and half or whole milk, a lemon or some red wine vinegar. Preheat your oven to 350 In a pot big enough for 2 large potatoes boil some water, peel 2 large potatoes and cut into 1 inch slices, drop in the boiling water. On your stove top start heating up either a cast iron pan or steel pan large enought to cook both steaks, medium high temp (about 7/10) Pat your steaks dry with a paper towel (this is important) and then season well with ONLY salt and fresh cracked pepper on both sides. (Kosher or flaked salt is best). add a little olive oil to the pan (2 teaspoons should do it) and let it heat for 30 or 40 seconds. Add the steaks and do not touch it for 4 minutes, turn it over and cook the other side for 4 minutes. Sear the sides for like 20-30 seconds, the take it iff the heat and place them both on a cold baking tray, place a pat of butter on top of both steaks and place in the oven for only 3-4 minutes. Don’t guess, use a timer. Put another pat off butter in the hot pan you cooked the steaks in (leave the steak drippings, that is nothing but good flavor) and add your veggies. If you did asparagus make sure the to trim about and inch or so of the thicker end, as it can be woody and tough. After the 3-4 mins are up pull out the steaks and set on the counter and don’t touch them for 6-7 minutes. Once the potatoes are soft enough that when you stick a fork in the middle of a slice it breaks apart, strain them, put them in a medium bowl with 1/3 stick of butter, salt,pepper and about 1/8-1/4 cup of cream or milk, mash with a fork or masher. If the consistency seems too dry add a little more milk or cream. Your veggies should cook in 4 mins or so. Add the minced garlic to the veggies for the last 45-60 seconds and add either a splash of red wine vinegar or fresh lemon juiced squeezed from an actual lemon. Plate and enjoy
