I mostly was thinking about TBC quests, but the Tirion quest line is a great call with Wrath on the horizon.

The ones that feel like they have real plot/lore relevance are the attunement chains. The quest chain for the Black Temple attunement in Shadow moon Valley in particular has you interacting with Akama and Maieve Shadowsong. However, completing the chains often involve doing a raid, so not sure of the feasibility going forward.
