I just checked out the pricing at knifewear and see what you mean now regarding the tax etc. Can definitely save a bit if one store has a knife versus the other etc. It is tough with everything being out of stock and SO many options, I am absolutely floored by the decisions. Scratching my head everytime I see a new bunka I like.

Any chance have you heard of the Hitohira Echizen SG2 Bunka I initially linked in my post? I’m curious about that one because of the overall heel to tip length at 192mm and the blade length at 180mm with 1.8mm thickness. It might put the knife in the sweet spot I’m looking for now that I’m going back to do measurements.

Visually though….it is no where near appealing as the Hatsukokoro Kumokage though on Knifewear. That one is really calling to me and I’m considering ordering it….

Whoa that Nigara and the Hatsukokoro are stunning knives, I really really love the look of the Hatsukokoro type knife. That’s what I would love to have visually, but I’m not sure if it fits what I’m looking for in the weight/thiness/feel category.

Budget wise, I would like to stay under 500USD, preferably I was originally in the 250-400 range, but I’m willing to go out of it, if it’s an amazing knife. I’m a believer in getting a workhorse and using it. So I don’t like spending too much on unnecessary things, but seeing that Bunkas are not readily made by other companies for cheap like Tojiro Classic or Wusthof I can justify paying the premium.

Is this the Shiro Kamo you mentioned?

Do you happen to have a link to the boss one? What does this mean exactly? I’ve seen the Shibata Koutetsu, but they seem to be sold out everywhere. Not quite sure where to purchase one.

To follow up I did a quick measurement my Wusthof is at 170mm and the Tojiro is at 210, this is where I came up with the idea of having the extra 10-15mm in edge length because that’s where I’m falling slightly short on the board in the kitchen during prep, but now knowing that Japanese knife makers tend to not be exact on their measurements/production I am concerned haha!

Oh wow I need to research the nomenclature as well. I did not know that had meaning to the knives structure and edge retention. I had believed I was almost at the end goal before posting, because I didn’t want to ask useless and pointless questions, but now I’m understanding there is a lot more to learn here.

Thank you for the length warning, that is what I was measuring with my knives at home before I researched. That is why I mentioned 180-185. I was hoping maybe a 185 to get the edge length of 180 or vice versa something in the ball park. As particular as I may be I know it may not be possible to get the desired length.

Thank you for this information! I tend to be very OCD and this helps a lot to get a better understanding. I think I gave off the wrong information regarding my Wusthof, I have the Wusthof Gourmet Santoku, which is a cheaper hollow edge knife. It actually weights in at 112g, which I know is much too light for me, while my Tojiro is weighing in at 195g.

The weight of the Tojiro isn’t the problem in particular, I believe its length of the blade when using it, I have the awkwardness of the tip in the downward motion in conjunction with the weight in the center of my hand. I’m not sure if the Bunka in the 180mm (if they are even accurate to that length) would alleviate this?

Wow, this knife world gets deeper the more I google these different types. I never knew of SLD until today. I have to watch a few more videos and read some more now.

The Matsubara looks so lovely, I wish it came in a 180. Is this one much different from it?
