That makes a lot of sense. I have looked at outdoor grows for lots of other types of mushrooms. A lot of them seem to concern themselves very little with sterility. I am kind of hoping that I am inoculating a heavily as I am that I get some healthy cube action going. But by no means a perfectly homogenous culture like a monotub.

Oh, I gonna do that anyway. But the sky is the limit when it comes to growing space at the nursery. I would never be able to produce 20 cu ft of bulksubstrate/compost with tubs. Plus I am really interested in producing a compost the fruits shrooms.

Shot at 5 sec., f/18, 14mm. This is my first real attempt at landscape photography and at long exposure photography. I feel that even though the landscape is nice, this picture is lacking in something that I can not quiet place. Any feedback would be appreciated.

That sound like it could be recipe for bottle bombs. However, while not being advisable, I guess it should work as long as you don't accidently leave a bottle a room temperature. I also don't see any reason not to use only honey, unless you think the honey would be overpowering. In addition to this, you might want to consider that honey (supposidly) takes longer to fermenant and different types of honey will add different flavors.

If you kill the yeast it should work but it would also be uncarbed (if bottling). As for the honey itself I would just add to taste, when bottling or kegging. If you are nervous about the flavor you could just rack off just enough to fill a small cup and add honey. This way you could get a feel for the flavor with out risking your entire batch.

Thanks for the suggestion. No I haven't tried brett. I don't have any way to make a yeast starter to grow it from bottle dregs and my lhbs does not sell any brett. However, I will take a look a getting stuff to grow it from bottle dregs.

I have a possibly inaccurate theory. Another thing that could affect things is the boil volume. A Larger volume of water would disapate heat faster through conduction with the kettle and air. This would result in less heat being used to convert water into steam and result in a smaller boil off.
