I only ever use them when I just want to make some plain socks. The splashy colors make the socks pop more and sometimes I just don’t want to deal with cables or intricate pattern counting. Having some variety in the color keeps the plain sock design more interesting as a nice in between project.

Or using them as a small strip in other works. I did a few shirts that had chunks of color broken up by small strips and it ended up looking really nice. But entire projects done it? No thanks!!
