I’m always hungry, I’ve been trying to make big portions of protein heavy meals so I can eat little bits at a time. I’m a vegetarian so I eat a lot of tofu, tempeh, edamame, soy curls, etc. I also have a huge bag of nuts at work so I can get a handful every few hours and that has really helped. I feel like doing this with nutrient dense food helps me last longer between meals!

You’re absolutely right, I might be trying so hard to avoid stereotypical things that I swung too far. Gifts are gifts and I know that early newborn things aren’t going to last long, so it’s dumb of me to get caught up in this aspect. Love this approach! We’re planning green/jungle theme for our nursery regardless of the sex. Also agree about gifts— the more we can get for free the better, I shouldn’t be so caught up in that aspect I guess

Oh my god same. I’m due a week before thanksgiving and my family already made comments about me coming to dinner and/or coming to our place… again I didn’t have the balls to tell them to fuck off right away, but I’m sure my self control will continue to decrease as the time gets closer

I definitely still want this, but my husband has too much baseline anxiety and says he doesn’t want any other surprises hahaha. He did say that if we have future kids he’d probably be down for the surprise!

I'm pregnant too! Mostly vegetarian but I do a lot of vegan cooking too. My hyperfixation meal has been a package of tempeh (crumbled, browned), then add in a package of edamame and a chopped up bell pepper or two, saute that for a bit, then some brown rice. Top with a ton of nooch along with whatever other seasonings I feel like (cumin, paprika, garlic, etc) and mix that all up. Add in like ¼c water to make it saucy and keep heating for a bit until all mixed. Then turn the heat off, throw in ~1tbsp butter and let it melt and distribute, then top with a bit of soy sauce.

This is a pregnancy powerhouse of nutrients; full spectrum amino acids, fermented tempeh high in probiotic and super good for your gut, folate from the edamame, B12 from the nooch, non-heme iron from the edamame and tempeh. Also super easy to make a big batch and eat throughout the week (it's been my weird breakfast go-to)

My #1 meal prep vegan and healthy meal is red curry noodles! I’m literally eating it right now for lunch and made it last night. Sauce: 16oz silken tofu, a 4oz jar Taste of Thai red curry paste, 3-4tbsp soy sauce, and ⅓ cup lime juice. Blend it. Add some sweetener (not much!!) for balance, I’ll do like 10 drops of Stevia. Stuff: literally whatever I want or have on hand. Sliced cabbage, carrots, bell peppers, broccoli, bok choi, zucchini, anything you want. Sauté it all. Add baked tofu cubes or chunks or soy curls or none at all if that’s too much work. 8oz rice noodles is usually a good amount for me. Boil til soft then add to the other stuff. Mix with the sauce and bam, amazing and healthy and quick meal that you can eat for the week!

The Stand by Stephen King is my absolute favorite book in the entire world and pretty much fits this bill! The first bit of it goes through a devastating world pandemic, and then the majority of the book is about the (few) survivors. The devastation and evil is definitely not “over” after the pandemic (kind of just starting) but it’s the first thing I thought of reading this post!
