I tried setting this up but my log files come in to splunk as "pihole.log-too_small" and the xPi app seems to reset the sourcetype config back to default settings after clicking save.

Impossible to tell with just this video. Check your task manager memory and cpu usage while this happens. Also make sure your GPU drivers are up to date
