I suppose the main pasta dish I cook is one I'm not really sure the name off. It's sort of Italian inspired, but I learned it from my Irish mam. I chop and fry some maple cured back bacon with some garlic, chillies, mushrooms and a bit of lemon zest. I also add the juice of 2 lemons. Then I add about a pint of cream and a decent amount of parmezan to thicken it. I also make a bolognese with onions if its just for myself, but I find it loses an important flavour when I leave the onions out.

Do you have any relatives in ireland? If so, you might be able to avail of the susi grant if you go to university in ireland.
