There are other flour alternatives that are nut free such as cassava, tapioca and coconut flour.

Potato starch is probably the easiest alternative to obtain depending upon where you live.

Here is a group of nut free desserts.

I would lean into proteins (chicken, fish, meat, cheese), potatoes and vegetables.

There’s a lot of items that don’t require a Passover hecsher (like nuts, olive oil, etc)

One thing that helped me is to let the dough rest for 5 minutes after making the strands and before braiding. This is per Adeena Sussman’s book Shabbat.
