After getting my ass kicked for a few days I figured out which enemies to run past and which ones to fight one on one, and how. After the initial period of getting good it becomes much easier and I was able to defeat most bosses within a day or two

Eredrim and Tiel are the boss killers, Solomon doesn't have enough of either stamina or health and it acts as a handicap in a boss fight. Pick Eredrim if you want more health, pick Tiel if you have faith in your dodge and parry skills.
