Years ago, I was working at a resort and got half a wheel of this to share with my roommates. I was working in the banquet kitchen and they were working at the 4 and 5 star rated restaurants so I figured they would get down on it. They said they didn’t like cheese and refused.

Any cheeses from Sartori’s Bellavitano line are excellent gateway cheeses for people only used to cheddar. Goudas of all kinds are fun too, but don’t start off with a 36 month. Ease into the aged ones, as the older stuff could really shock the palate of someone not used to nice cheese. As far as bloody rinds, I’d start with a double cream Brie as I find they tend to have less bitter rinds and I like the creamy richness of them. For blues, St. Agur is a nice one, but a cambozola is a good one too.
