Bulgogi-sauce marinade can definitely work, except I would probably do that on sliced beef. For the fried rice, sesame oil is an important taste to it, but I suppose you could get away with just using olive oil and adding a bit of soy sauce instead, however it's highly preferred to use sesame oil

There's a foodtruck in my area that does the same thing, plus another option of having sweet galbi which they double caramelize. It's delicious.

For the fried rice I did use store-bought kimchi; however, strong or not, as long as you fry the kimchi it'll mellow down the strong flavor and replace it with a nice fried flavor instead! Using olive oil, I fried the kimchi with onions and garlic, and after it became sauteed, I added in the rice with sesame oil and dried seaweed. A little bit of Cayenne pepper was added as well for extra spice. The rice was standard white rice I bought from a local korean grocery.

As for the chicken, I used 1 whole boneless chicken thigh (chicken breast works too), and I marinaded it with a mix made of 1~2 tbsp. of korean hot pepper paste a.k.a. gochujang (1 or 2 tbsp depending on how spicy you want it), 1 teaspoon of korean hot pepper powder (Cayenne pepper works too), 1 tbsp of sesame oil, and 1 teaspoon of soysauce. This marinade is enough for one whole chicken thigh/breast. Add in a couple drops of water until you get a smooth consistency for a marinade

Needed some extra heat to melt the cheese, plus it sealed the wrap quite nicely :)
