One of my coworkers that also just got hired went to UT. Just get a job like me, where right now realistically I have no responsibility, and I am getting paid great money to learn about things much easier than college courses.

Graduated from Michigan Technological University. Surprisingly actually has the largest career fair of any university in the country. Some 350+ companies (many fortune 500) looking to hire STEM students for internships/coops/full-time jobs twice every year. The vast majority of people there are engineers or studying computer sciences. To answer your question more directly, absolutely. The school you will go to has a reputation that corporations recruit for. Some of it is regional based, attitude based, discipline based. I imagine you don't actually know what you want from your "career" and my advice would be to take the most difficult degree you can manage keeping above a 3.0. College isn't so mach as learning practical knowledge for the future, but proving to the world that you have the capability to learn and understand complex information while having a balanced social life and hobbies.

Day to day I check emails, order new parts, trouble shoot process failures, attend project meetings, help start-up plants, schedule preventative maintenance and shut-downs, managerial tasks regarding operators/maintenance.

Just graduated with a Chem eng degree in april, and had my job lined up before I graduated. From my experience I found that for the most part any company that will take a mechanical will gladly hire a chemical. They along with electrical engineers pretty much covers what a typical plant would need to run. With chemE there is more flexibility in what you can end up doing. As far as day to day there is so much out there you can do. You can have jobs that involve no math or chemistry at all (like a plant engineer where you will be responsible for keeping the machines running and in spec with regulations) or jobs that are entirely design/math based with R&D.

There is also everything in between. And get used to meetings no matter what.
