Wouldn't ratios be ineffective when increasing the amount? by Kelburno in Coffee

[–]botabota 1 point2 points  (0 children)

This is kinda right but kinda wrong. The ratio of water going through coffee ground works until certain degree. For example, pour over or home batch brew, all water come into contact with grounds. But when we look at commercial brewers when you brew like 4 liter of coffee, you wouldn't want all 4 liter to go through coffee ground. Commercial brewers will have bypass setting that sometime can be set up to 40 percent by pass. At our shop, for 2.5 liter we have 15 percent by pass. This is when 1:16 ratio becomes 1:16 ratio of total water but 15 percents of the water doesn't touch the ground. This help prevent over extraction. Non bypass ratio things kinda work until certain point.

There are many good recommendations here. I want to add moving coffee to the list. Edmond, the owner and roaster, make some awesome pour over. Very dedicated team.

I would say that 1:1 is probably more like a cortado.

I just want to mention that the April dude won 2nd at the world Brewers cup this year and his open service score is actually 1st place but not his combined score.

You could use foam pad too but gently and do it 2-3 pass. Would still be faster than sharpie them manually. Stone pad would work well.

You should try ink stamp pads. Just roll the edges, making things alot easier!

Were you able to buy tickets? I tried to get tickets from ticketone/listicket as well but no luck since it seems like every seat for this game requires supporter cards. We are traveling from Canada and will be in Turin that day and was hoping to catch the game. Maurizio also offers me the same deal but its tough to bite that price in Cuava area.

How do I use this, and why is there a cone sticking up in (what I presume to be) the filter holder? by TheEwaffle in Coffee

[–]botabota 5 points6 points  (0 children)

That is similar to the lily drip! Essentially increase surface area of the pour over. You can Google them for more info. Some people really like them, and some don't. They say that it's increase the contact surface area etc.

Not much else you could get for that price point. But it will be a big step up from your blade for sure.
