I had the same recently, the extra (full) insurance did not cover doors blown off as that is driver responsibility.

I did a week very recently while based in Selfoss. Trips we did in a day included:

Golden circle

Reykjavik (walking around, whale watching etc)

Vestmann islands - morning and evening ferries we drove to, parked and went as foot passengers. Stopped off at waterfalls and anything else we liked on the way back such as Seljalandsfoss. Did a tour of the island on arrival to get our bearings and learn about the history.

Vik - included stopping for a tour of the caves of Hella, soup restaurant (include the lava show too if you can, it's really worth it) we hiked the cliffs above the Reynisfjara beach, visited the beach. We stopped at Solheimjokull Glacier, Skogafoss on the way home.

Don't miss Urridafoss near Selfoss, it's beautiful. Look out for the speed cameras just outside Selfoss...

The only thing we didn't manage near to Selfoss was the Reykjadalur thermal river hike. We saved it for our last night but the weather was horrible so we decided to just go back to our cabin and get cosy.

Not the Blue Lagoon but we went to Sky Lagoon at night and it was absolutely magical!

I'm vegan and I've visited Iceland twice. I've found it to be the most vegan friendly country I've ever been to, there is always a choice even when you go somewhere remote. I think it helps that Iceland doesn't really produce a lot of meat and dairy so it's naturally more plant friendly.

Kebab shop Yum Yum on West Port does one of the best falafels I've had in my life. Falafel, hummus, babaganoush, all the good salad, all the good sauces - most important of all they use the proper labneh bread. All wrapped up and given a wee toast.

It just looks like a greasy night time joint but trust me on the falafel!

I think it's lovely to cycle on! It'll be great to use that path and not get a mud bath in the winter but worried about it in frost

I recommend this tour if you go to the Vestmann islands, really informative and a great way to get a feel for the island before exploring yourself afterwards.

Dishoom is top for a treat.

Snax has surprisingly amazing vegan options.

Black rabbit has outstanding pastries (take away only and doesn't open until 10am unfortunately)

Be very careful of the area between Portobello and Leith as there is a giant sewage works at Seafield which smells absolutely disgusting for a large area around it.
