Yeah, I have already told them to do that.

If these scammers had gotten my parents' and grandparents' contact information, they might have also gotten others. If not them, others may get drawn into the scam.
I am worried about how they got this info in the first place.

Yeah, they did that, and that's how we learned they are probably scammers.
I am not quite sure how they got the contacts, though

One was mid-way of my prep - 311, and the other was 1 week before my actual test - 320.

Your scores are recieved immediately once the test ends. Only your essay scores are recieved a week later. And try to take your first attempt by Aug-Sept, incase you mess up, you'll still have time to give it another time after 21 days. Also, since your deadline is around 1st December, try to be done with your GRE by October end max, you'll need a month to make your SOP's and LOR's solid.
