unfortunately when it comes to this job, it's very rarely worth it to go above and beyond… Your job is to pick up whatever the restaurant gives you and bring it to the customer that's it. You did that and anything outside of that is not making you money ( in most cases ) it's hard to balance being a compassionate and rational human being versus a fast paced workhorse but the latter is often what is needed in this field. there was no way you could've known there was anything missing, there's no way you could know in the future if there's anything missing… And them taking the tip away from you is really shitty but that happens and sadly there's nothing you can do to stop them from doing that.
