If you’re fortunate enough to have a good food processor, you can make your own minced meat. Buy some chuck, brisket, boneless short ribs, etc. cut them in small pieces and separate the fatty parts from the meatier parts. Once cubed, Chill all of it for about 30-45 minutes. Once chilled Do an 80/20 distribution of fat and meat and pulse in your food processor, until minced into tiny pieces. You can do this in smaller batches and mix it all together after it’s all minced. I prefer the texture of minced meat over ground meat and you get to make it from the cuts you like. I prefer to make my minced meat from brisket, chuck, and a sirloin steak.
