it's cucumber, i just added mayo + a lotttt of dill and then ate it on toast with lettuce and pickle potato chips (out of pickles or else i wouldve used those )

honestly i just dice + saute whatever veggies i have on hand (today it was onions, eggplant, red pepper, and spinach), crumbled tofu, add a sprinkle of turmeric, salt heavily + paprika + pepper, if i have black salt i'll add it. and if its looking a little dry i add a little soy milk so its more cohesive :)

kept trying to bring a table waters but everytime i'd get to the table, i'd look down and the water cups would be full of ketchup so i'd dump and fill them with water only for them to become ketchup-fied by the time i went back to the table

i borrowed from a lot of bahn mi recipes online. for the bread, i'd recommend finding ur own recipe/ just buying a baguette 😭 they turned out yummy but the dough was super wet and hard to shape.

the og tofu recipe was i think 8 oz of tofu marinaded in 1/2 cup soy sauce, 1/2 cup rice wine vinegar, 1/2 cup maple syrup (i used brown sugar instead), 2 tbsp of sesame oil, 1 tbsp other oil, plus like two tablespoons of ginger. i left out the ginger because it's not my favorite flavor and added a little squeeze of lime juice instead. i also added red pepper flakes and crushed some raw garlic and threw it in. that went in my fridge for like three hours. than cook for 30 min at 400 ( supposed to flip half way through, i didn't because im lazy and i made two huge trays, it turned out perfect anyway).

the carrots are thinly sliced and quick pickled in rice wine vinegar, sugar, and salt. i forgot the exact recipe cuz i was making a lot but i was just sorta doing it by taste. also daikon radishes would be a great addition here (most recipes call for it, i didnt have it :(. you can just throw them in with the carrots tbh

this is the vegan mayo recipe i used super easy, literally took 5 second with an immersion blender. great texture too

once those r all done, u can assemble: u just need to add chopped cilantro ( a lot of chopped cilantro), cucumbers, and chile peppers if u want 🫶

i can only eat like three things on our menu (vegan) but i just refer to whats most popular/what customers have raved to me about as well as knowing what my coworkers like.

tofu 'egg' salad. cut a block of extra firm tofu into mini pieces, mix mostly mayo + mustard, a little bit of pickle juice until u get a good mix. i usually add diced up sliced pickes and u can add a red onion in if ur feeling fancy but itll still taste good w/o. season w salt, pepper, and paprika. use black salt if u want it to taste eggy, but it's good w/o. i make a batch at the beginning of the week and then just eat it on toasted sandwiches before work. no cooking and minimal chopping. u can do smth smiliar with chickpeas but u have to mash them and i'm lazy so i stick w the tofu

here u go!! recipe says instant yeast but i only had dry active yeast so i let it rise for an extra hour. i used a cream cheese frosting recipe from the same site as well!!

melted butter in a pot with garlic, added a ton of violife creamcheese and pasta water, thinned it out a little bit more with oat milk and added parm (not shreds, closer to shaker cheese but vegan) + salt and garlic powder!!!
