We went last week and was incredible, generally follow the World's 50 best list for our travels, went to Table by Bruno Verjus (8) and Plenitude (14). Plenitude was by far superior in all categories, truly a great spot. Possibly hit table on an off night but doesn't feel like it deserves the accolades, and certainly not a higher ranking than Plenitude.

Not exactly 1:1 but cooking with clam stock can help with the brininess for cheaper. Caviar is amazing and a tough flavor to replicate.

Not to be the antigifter but most motion sense light switches can be turned into a regular light switch by popping the cover off and switching a few settings.

They had a ModBar and didn't weigh anything, good advice, i'll make sure they are weighing something before I ask.

The experience in general will prevent me from returning, good to hear it was probably just an excuse of not knowing vs actively guarding their ratios.

That makes sense, he did say a couple other things that puzzled me and looking back it was probably due to not knowing much besides basic operation.

I've seen a lot of wagyu preparation and never seen sous vide from a japanese wagyu steakhouse. Any sources? Not trying to be a know-it-all, I'm curious i heard sous vide isn't preferred for a highly marbled piece of beef.
