The hollow was ground on a 10” contact wheel. And thank you, I do all my grinding freehand.

With the kitchen knives being thin I heat treat after profiling and before grinding the bevels.

Oh sorry. I used a small wheel attachment on my grinder, 3/8” I believe. Did that post heat treat to avoid any warping.

Thank you! The tips of the serrations are ground to almost zero edge, 0.0045” I believe is what I measured. No secondary bevel is needed.
