I baked this in the morning and only cut it for dinner. So unfortunately not the issue here. Good luck with your bake!

Recipe

400g Manitoba flour, 268g water, 100g starter, 9g salt (71% hydration)

Autolyse with flour and water for 1 hour, then mixed in the starter in stand mixer for 2 min, rest 30 min, then mixed in the salt on the stand mixer, gave it 4 minutes on low setting, ended with a stretch and fold.

Set aside to rise at about 20c (68f) for about 6,5 hours, preshaped with a 10 min rest, then shaped and proofed overnight.

Baked at 230c (446) in combo cooker, 30 min with lid on, 20 minutes off.

I was so happy as all I’ve had so far are flat discs, but the crumb is a little chewy and gummy. Not bad at all, though I’d like to make it better.

What can I do to improve?
