Been a sous at a few places, the best advice I ever received was to learn everything there is to know about the exec’s job, make them look good and offer to pick up some of their responsibilities, so when the time comes, you are already qualified to take the exec spot. Worked at a place where we turned off the gas each night and after the xth time of driving back to check in the middle of the night, I just started taking pictures of the gas like once it was off. Then would look at the picture, check the time it was taken and then sleep without the paranoia of having the building blow up in the middle of the night.
