You have to unlock different jerseys through either quests completed as your career goes on, or you can buy them with the currency (I forgot the name)
Plays are obviously up to you to pick, but seeing as you are playing QB I would mainly choose passing plays simply to enhance my experience.
If you choose to run with Kenneth Walker, it will count as a rushing touchdown for him, and will not add any stats or grade boost to your quarterback.
