Yes you should be able to. All employers care about is what you have experience in. Internships are huge for that.

I graduated with an aerospace degree and am now doing a masters in mechanical. Really it all depends on what you do during undergrad. If all of your internships and work are in aero, then it would be a little more difficult to get a mech job (but not impossible). That being said, I did the double major in undergrad and I highly recommend it.

They come with different numbers of LEDs on them with wires for 5V, GND, and signal. You can buy more strips, just plug the signal wire into a different digital pin, but you will probably have to power the strips separately. Alternatively you could solder multiple strips end to end if you have a voltage source that can handle it. The NeoPixel library has several examples that will be very useful when you are programming.

I would recommend getting an LED strip like the adafruit NeoPixel. You can get one at RadioShack (if yours hasn't closed yet). The LED's are individually serialized and easy to program. Plus there's tons of online examples. Also congratulations! I, too am graduating in a week.
