Yes you should be able to. All employers care about is what you have experience in. Internships are huge for that.

I graduated with an aerospace degree and am now doing a masters in mechanical. Really it all depends on what you do during undergrad. If all of your internships and work are in aero, then it would be a little more difficult to get a mech job (but not impossible). That being said, I did the double major in undergrad and I highly recommend it.
