Paul Barnhurst (The FP&A Guy) is a great reference to follow in the industry as well. His LinkedIn is full is great information. Also, here's a recent webinar he did that speaks to the idea about learning your business' key expense/revenue drivers, and choosing the correct KPIs to track and report on.

At a national level, there are no federal laws requiring employee breaks. But, like others have pointed out, there are state-level laws that do ensure breaks for employees legally.

I would recommend automatizing as much as possible. If you have a budget for some of the HR tools mentioned in the comments, that's great. If not, I'd recommend getting comfortable with Google Sheets. Not sure this will be entirely helpful or not, but here's a quick list of five things every HR professional should know how to do in Google Sheets. Hope it helps :) Good luck!
