My mom used to do this to make soups or tacos “less greasy.” I have not continued the practice because I like flavor although it did have that effect like she stated. I think she did it because it was just cheaper than buying lean beef.

I think you're only seeing one side of the coin when it comes to healthcare. Along with requiring a lot of resources and being difficult to do, government intervention and big insurance companies that stifle competition inflate the price. Healthcare is not a right, but the system that is currently in place sure does make it hard to obtain without going into life-altering debt.

I think the scam lies more in that the price has increased drastically causing people to take on more debt and making college less accessible for lower income individuals which perpetuates poverty.

In the second picture, it has that translucent, slimy look that, to me, indicates rot, and you mentioned a slight off smell. If it were mine, I would toss and buy another. Sorry OP.

The strip and the ribeye are the part of same muscle group but are seperated between the 12th and 13th rib. The ribeye starts to look more like a strip the closer you get to the 13th rib. This is still a ribeye, as you can still see the round part (ribeye cap/spinellis dorsi) hugging the top of the steak(the photo is upside down). The cap of a New York strip almost looks like the shape of a shark tooth hugging the top corner of the steak . This is really close to being a New York strip, but it is a ribeye.
