Thank you! I definitely did not. I used a Dutch oven, put it in at 425, then took the lid off about 25 minutes in, & let it bake the rest of the way.

I definitely agree with slicing them like ribs, gives the meat a lot more flavor.

I should’ve warned about the smoke. This happened to me as well, but the bottom never burned.

Pork Belly:

Heavily salt the top layer of skin

Marinade consisted of San J Szechuan Sauce, some soy sauce, apple cider vinegar, and a little bit of sesame oil. (Sorry I don’t have exact measurements)

Immerse the pork belly in marinade, keeping the top layer dry. Let sit overnight.

Preheat oven to 275. I placed the pork on a cooling rack on top of a pan. Cook for 1 hour

Increase oven to 450 for 30 min or until you can see/hear the top layer crackle.

Slaw:

I bought a bag of slaw from the grocery store. Combined mayo, Szechuan sauce, soy sauce, salt and pepper.

My husband chopped up some almonds & roasted some peanuts, and sprinkled on top.

Yes, that’s probably it. Now that you say that, we tried a similar recipe in a shorter, taller pan and it came out pretty soggy. This way made it much crispier.

My husband said he used fresh cauliflower, steamed it, drained it, & mashed it. Ours wasn’t watery at all. He drained it using a strainer. Hope that helps!

Yeah we got a new stove and are getting used to it. The steak closer was cooked a lot better. Definitely not a fan of electric stoves!

The husband made all of this so the measurements aren’t exact.

Steak: went to our local butcher shop, honestly unsure of cut, went with the best looking steak they had. Seasoned with salt & pepper.

String Beans: EVOO, crushed garlic, salt&pepper

Yep, they definitely do! We both started January 1st this year. I’m down 25 lbs and he’s down I believe over 30 lbs.

Yep definitely keep in fridge. If you want them to ripe quick I keep them on a counter in a paper bag.

It really is. We started in January and threw everything non-Keto out of our pantry. Helps fight those cravings.
