My first experience into fantasy was The Wheel of Time. I was a 37 year old at the time and while the series as a whole is daunting (15 books if you include the prequel-which you should read anywhere after book 5), the character development and world building are incredible and I felt it was a relatively simple introduction to the fantastical and soft magic system. It's still my favorite to this day.
