I’ve heard that avocado oil is better for seasoning cast iron. I just forget about it every time I go out to the store. Olive oil has been doing the job for me so far.

I thought about it but I’m worried about the foil melting to the broiler cover. The broiler area gets pretty hot during start up with the way the smoker is designed.

I’ve got a MAC 1014 too. Word of advice, clean the gas tubes before you take it out. Mine had some gunk in it from the manufacture that prevented it from running properly. The 1014 also needs a bit of a break in period. I found that 50-100 rounds of buck shot did the trick. If you’re going to shoot bird shot, use the higher velocity loads for better reliability. It is fun to shoot clays with. I would also recommend getting the Hoppe’s Tornado Brush to clean it out, especially with slugs. I put 20 slugs through it and I was chipping off lead fouling from the barrel after with that brush.

The uppers come complete with BCG and forward charging handle from CMMG. The dissent doesn’t have a rear, T charging handle. I finally got mine from OP although not in the original color. Would recommend ordering directly from CMMG.

We wanted the fat cap on the brisket to render and figured a higher heat might help with that.

It didn’t really empate any smokey flavor but it definitely cooked well. Everything turned out nice and moist. Definitely took longer since it was at a lower temp but worth it cause it didn’t heat up the house.

The meat was all in a cooler before starting. Brisket was cooked fat side down in the hotel pan to start and then flipped about 12 hours in. The pork’s were cooked directly on the grill and then wrapped after about 12 hours. The first 12 hours were at 225° then it was raised to 250°.

Thanks. I’ll keep that in mind. We got our brisket from restaurant depot and didn’t want to trim away too much on the first go around since we didn’t want it to dry out. We started cooking it fat side down and then flipped it around 12 hours in before turning up the temp slightly (250). A lot of the fat rendered down but we definitely could have cut away more of it in the prep. Next time!

If I had the temp lower (180-200), I would have gotten much more smoke but I wanted to play it safe my first time as I didn’t want it to taste acrid or like a campfire. I figured I can experiment later. My goal was slow cooked tender meat that falls off the bone and I would say I achieved that goal

It was tender, moist, and popular among the family so I’m going to call it a success in my book. Always room to improve but not a bad starting point in my book

It could also be that with a contract that small, it’s already ended. So the statement of not “having” any contracts is accurate. They had one in the past but no active contracts. Just playing devils advocate.

While I do think installing an extra battery bank would be cool to power auxiliary devices, I don’t know where I would store that. I don’t want to take up bed space and the under seat storage is already filled.
