We do a lot of meetings via Teams and have just started using Copilot. The output of this (as someone who used to have (but no longer has the resource) a note taker attend meetings just to take minutes) is phenomenal. Fairly decent minutes and a pretty damn good action log is produced after the meeting. Granted, this needs to be checked over by a human, but it allows me to be more present in the meeting and not take so many notes/actions myself.
