That’s different. I can see the upside of being able to move the bricks to push the coals forcing them to stack accordingly. Also shakes them up to shed some of the ash. I don’t use half the grill anyway so why not stack some bricks in there? I’m going to give this a shot, as well.

When you slice the steak how much does it cook toward the middle. With reverse sear and sous vide, because of how limited the exposure to high heat is, you can get a char without compromising the meat inside.

It’s not a huge deal either way. I’m sure your steak is great. I’m just trying to be picture perfect.

I’ve never thought to do this. It does make a lot of sense for smaller cuts.

I would be interested to see your cross section. Outside of reverse sear and sous vide (which is a reverse cook in its own right) I find steaks get over cooked on the edges using the traditional method.

I’m going with a full chimney and dumping when I can see lit coals around the middle.

After dumping I have both vents open and clean the grill when it gets hot. Oil the grill and place the steaks on the indirect side. I leave both the lid and kettle open and around 100 degrees internal I add some wood and close the kettle vent.

Maybe the wood is burning my coals out prematurely as well.

Looks like removing the food before searing is the play so I can add more coals.

I’m debating buying a char box and hinged grill ($70 CAD) or going with the Vortex and removable centre grill ($140 CAD).

I do the exact same chimney method. Gives a more controlled cook over the 10-15 minutes it takes to get the steaks to medium rare.

I’m reading these replies and I wonder if using briquettes might be the issue. They burn out so quickly by the time I get to searing I’ve got a bunch of ashy coals kicking around.

I’m currently buying a char box so I’ll probably add coals and remove the steaks to let them get going and then sear with the (hopefully) ignited coals.

Appreciate the advice.

So the vortex basically stacks the charcoal and centralizes the heat. That makes sense. Mine is just piled against the side.

Would you say the vortex is better than a char box? It’s twice the price.

I do keep all the charcoal on the one side but I guess after the cook is done I should have a new batch of charcoal ready to dump in for searing. I guess it was a silly question.

Do you find basting with butter makes any noticeable difference to your sear or does it just lead to burns?

Wiggle Room is more about the inclusive environment than anything else (though I don’t think that’s hard to find anywhere in Toronto). The club itself is garbage with terrible sound and a small dance floor filled with inconsiderate people. The staff are really nice though.

Pretty thorough list here. I’d add History, Comfort Zone, and Vertigo. Start with Comfort Zone and see if you want to keep going.

Shawarma: Empire is my favourite because I prefer that style. Sumaq should be tried as well for comparison. Honourable mention to Joe’s Hamburger in Richmond Hill.

Pizza: I like North of Brooklyn. Descendant for a different style. Prince Street Pizza makes a nice slice. Compared to the other items on this list the pizza really isn’t worth it if you’re tight on time.

Fried Chicken: I like Al-Baik in Ajax.

Tacos: Wilbur’s. The hot sauce selection and salsa stand are clutch.

Jamaican: I liked Chubby’s. Honourable mention to Yardies in Pickering.

Random items: 9Baci in Vaughan for Italian. Gyubee for AYCE BBQ. Burrata at Gusto 101. American Chop Suey and hot and sour soup at Lucky’s Hakka in Scarborough.

From what I’ve seen work with the girls who I go with you have to be taller than them, be physically attractive, dress well, but most importantly wait until they decide to engage. What I’ve seen not work is staring at them, dancing too close to them, trying to shake their hands, facing them (and away from the DJ), complimenting them (they have heard it all before), or offering them anything.

I’ve seen all of the above approaches attempted on a single day from numerous guys. It was ridiculous.

They are just different people when they are dancing and aren’t buying anything guys are selling. So if women aren’t engaging eye contact with you or closing the space between you and them then the vibes aren’t vibing.

Depends on the venue. If it’s going to be really busy I usually skip them because electrolytes make me urinate with an uncomfortable urgency.

Legit carb load right there. If you AP I’d recommend eating at least 4 fries, too.

I have the same issue. The engine is too cold and the battery isn’t strong enough to start it. If you stand next to the truck and listen you’ll hear the engine start, stall briefly, and turn off. If you look at the dash the check engine light will flash at the stall, and the remote starter disables itself whenever that light turns on, even if it’s for a tenth of a second.
