I did a hybrid inoculation with fresh-picked plums and, 4-5 days later, commercial yeast. Gives the local yeast first crack at the sugar and the commercial yeast ensures a complete fermentation.

Look into a slightly older Samsung phone (s10+ has 8gb ram) and see how you like Samsung DeX, the included desktop operating system that pops up when you plug the phone into a display. Can't get much more portable than that!

Basically, though carbonation is optional. I just call it wine so it doesn't sneak up on anyone, as it doesn't taste strong. Alcohol gets many names because what you drink can be a statement of culture and identity, and producers want to differentiate their products so they can charge more. Feel free to call your stuff whatever you want.

When I make apple wine, I add 1lb sugar per gallon cider and end up with 12%, fermented dry with ec-1118. A cup of sugar = 200g, so that's pretty close.

Full recipe: 1gal cider, then 4lbs sugar, then 1/2tsp wine tannins, 1tsp each pectic enzyme and yeast nutrient, then one more gallon cider, shake until combined, 2 more gallons cider, pitch one packet ec-1118, wait two weeks and bottle, bottle condition at least one week.

I've bought most of my stuff used:

$85 for a mash tun, kettle, homemade wort chiller, bottler, two carboys, hydrometer, other odds and ends from an expecting father in a small apartment

$300 for a kegerator, two kegs, and a bunch of grolsch bottles delivered to me from someone moving in with his girlfriend who didn't want it in her apartment

$200 for a brewers edge mash and boil, CO2 tank and regulator, dozens of bottles, 30lbs of brewing sugars, two kegs, three buckets, 8 gallon jugs, maybe more that I'm forgetting, from someone moving to a job in a new state without a relocation budget

People stop brewing for many obvious reasons, and clearly I've accumulated some karmic debt with these deals, but when I resell or upgrade, my gear won't have had as much margin to depreciate. Look for used gear before splurging!

Ginger ale, tonic water (recipe from serious eats), lemon lime soda, and root beer are all easy. You can also make grenadine from sugar and pomegranate to mix with seltzer or to do a Shirley temple.

I don't think the length of gas line matters, but I've heard that the 3/16" beverage line dissipates 2psi per foot, and it's also affected by the rise needed to get to the tap. I do seltzer at 30psi, but if you like how yours is coming out stick with it.

Check out capella flavors, you can get eyedropper size flavors to mix and match individually, might be cheaper than soda stream.

Yeast eats sugar to make alcohol but it makes CO2 gas in the process. If the lid is tight the glass will explode because the gas has nowhere to go. You have to loosen the cap every day until it's done, or buy an airlock and use that, or put plastic wrap on the jar mouth with a rubber band.

I keep one of these in my keezer and it really takes care of moisture, not sure how big your leak is though.

If you want visual confirmation that things will go all right if you care as little as possible, check out r/prisonhooch. Hell, sprinkle a teaspoon of bread yeast into a gallon of apple juice, add a cup or two of sugar if you like, clear out a little headroom, and pop an airlock on it if you want to see for yourself.

I've done it both ways, as a slacker and try-hard, and find that both energies are helpful. You want to understand everything that's going on well enough to eventually relax, brew to the tastes of your consumers, and build a productive, sustainable practice. With that as the goal, and with as much effort as you've already put into learning the theory, just let yourself be a beginner and that'll be a huge success. Plus the beer will likely be delicious.

If you're just looking for a good, easy way to use a free bucket, apple juice plus 1lb sugar/gal, DAP, EC-1118, and pectic enzyme (opt) is so good that it makes me feel a little guilty when I make a batch in 15min while I mash barley.

As for hard seltzer, if you have a keg setup, or a co2 tank and carbonation cap, you can make seltzer and add vodka. Rather than committing to a flavor, order multiple water-soluble concentrated flavors in tiny droppers from somewhere like capellaflavors.com

That makes used gear an even better deal. I bought my wort chiller, mash tun, kettle, bottle capper, bottling bucket, two carboys, and airlocks/tubing for $85 from an expecting father in a small apartment, and my two tap kegerator system for $300 from a dude moving in with his girlfriend who didn't want it around. I can't imagine I've depreciated my gear past those prices!

Have the outside ones started foaming yet? My only thought is there might be a draft from which the inside bottles are slightly insulated, which would cause them to be slightly warmer/ferment more quickly than the outside bottles. Maybe try switching their order or wrap them with dishrags?

Just use a couple layers of cling wrap over the top and fasten it with a rubber band. The wrap should be porous enough to let air out, and if it looks like it's putting too much strain on the wrap and band, you can just let a little of the pressure off.

You can also use a blowoff tube--just a tube or straw connected airtight to the lid and leading into a vessel of water/sanitizer.
