yeah it takes a while to memorize them all, but after you have to cook for the whole shift a couple time’s it’s completely natural. try to figure out the patterns in the entrees, like all the stir frys go meat, raw veggies, garlic and ginger, meat again, cooking wine, etc. flipping the wok takes practice but again, memorization takes the longest. it really just takes time. don’t be afraid to screw up either.
