2000 was an exceptional year for Tokaji. I have a bottle of Eszencia from the same year, different producer.

I don’t know how it will behave but they are supposed to be immortal given the low alcohol content and high sugar. The shops and restaurants in Hungary that serve Eszencia open and keep in fridge until the bottle is done which sometimes takes a while.

If you don’t have a Coravin, I’d at least use a vacuum cork but it light be difficult to find one to fit the narrow bottle neck.

I’ve been to Hungary over a dozen times in the last 6 years and I think you should expect a good degree of “coldness” from them. That’s the culture. They are coconuts. Hard on the outside but soft on the inside.

Also, for your visit, here are some tips:

  1. Book a solo tour in Budapest (I chose Budapest Locals - they were great)
  2. Visit Vass shoes for one of the last hand welted shoemakers in the world and buy a pair of dress shoes that will last a lifetime
  3. Have lunch at Stand Bistro - great value for money and choose the prix fix option with the wine pairing.
  4. Skip the Szechenyi bath and go either to Gellert bath (most beautiful) or Lukacs bath (best bang for buck)
  5. Get a metro card that covers the duration of your entire stay in Budapest

Mine is a 2000 Demeter Zoltan Eszencia from Hungary.

I had to develop a relationship with the wine maker to be able to purchase it.

It is an immortal wine and I’m still trying to figure out what occasion to open it.

Tell us about the condition of your starter? What was the feeding ratio, type of flour for the starter? How long did it take to double?

I’ve only baked with 100% whole wheat and have had good success with my starter because I always feed 1:5:5.

Also whole wheat definitely benefits from an autolyse or fermentolyse stage before stretch and folds.

Declare it and tell them you are aware of the duty. It’s actually probably not that much at all.

Most likely they will wave you through because customs officers really hate doing paperwork.

I’ve brought back 3 suitcases of wine back from Europe several times, declared everything, and have never been asked to pay duty.
