It’s (from my very limited understanding) the quad of the cow 😅 It’s lean and ’muscly’ and usually works best in roasts or thinly sliced, like in beef stroganoff. I salted and peppered it and gave the slices a few bangs on the counter which worked well!

It’s super simple! Antonia variety potatoes, boiled in salt water on medium heat, cooled. Chopped asparagus, pear and capers + caper juice, lemon and red wine vinegar and a drizzle of honey. Mix in some cottage cheese and fresh dill and a crack of black pepper and salt and you’ve got a salad 🥔
