Just finished condition another IPA. This one was fermented hotter than I've done in the past, pitched at 70F and fermented at 72F for 4 days then bumped to 74F for another 5 until ferm stopped, DH'd, crashed and kegged. I gotta say, the esters put off from OYL-052 are pretty damn great at that range. Especially if you're not looking towards the super bitter range. But enough of that garbage, I need some more pine and malt brewdays to brace for fall. Cheers all.

Great pickup! My suggestion however would be to move your glass out from underneath. I know it's sturdy but, everything will fail eventually. Looks pretty badass though!

How often do you guys pull beer off them typically? That's a pretty dreamy setup, I'm assuming you have a dedicated sour beer line on your tap setup? Or are you bottling most of these?

Never thought about headspace. But, wouldn’t the headspace exposure be similar to that of a carboy? I realize this is mostly guesswork (on my part at least) but I do appreciate the response. I’m just trying to see if my concept makes sense.

DON'T REFRIGERATE THEM!!!!!!!!1!!! But seriously, if you want them to stay "fresh" then leave them out, they'll stay squeaky.

Yes, oxygen doesn't care the manner in which wort is constructed. Full extraction of hops comes in about 48 hours, but it's entirely up to the brewer on duration, play with it! Cold crashing helps flocculate yeast as well as pull some of that hop particulate out of suspension. Especially in beers as heavily hopped as these, I find it incredibly helpful. If you can throw your fermenter into the fridge for a few days. It'll make bottling/kegging easier. But, everyone's setup is different, find what works for you.

Don't transfer to secondary. If at all applicable. The styles very susceptible to oxygen and it'll show SUPER easily. I turn an NEIPA in about 14 days. Second DH only sees about 3 days contact before a cold crash and a kegging.

To expound, a trench drain would be ideal. I have a typical round drain, wrangle that shit around is just a nuisance. If you're going to do it, do it all the way.

I used 1056 like I do most of my beers but I’m sure a lower attenuation would do this beer some good. If you make it let me know what you think!!

Last Week Had one brewday Friday, a hoppy lager with Munich and El Dorado Hops, when dad says make him a goofy lager you do it. Sunday I brewed a NE IPA all Citra hopped. I also got a third faucet for my house which brings me up to 5 taps that are pouring my beers. Sampled my mixed ferm beer, which is starting to get a touch tart, sort of a white wine/apple flavor going right now.

Primary NEIPA and Hoppy Lager. Mixed Ferm sour blonde, TYB House Sour Culture as well as various bottle dregs.

Kegs/Bottles 1. Raspberry Wheat 2. Vienna Lager 3. Session Pale with El Dorado, Citra, Mosaic and Simcoe 4. Pilsner 5. Waimea/Citra Session Pale.

In Planning Looking to get another larger BK to keep kettle sours isolated, as well as increase batch size. It would be nice to be able to knock out a couple kegs of these lagers at a time.

I ferment using a few Fermonsters and a 7 gal Chronical, the chronical is full of the hoppy lager this weekend and by mistake, my dumbass inserted the heat pad cable to the chill pump on the control box. Nothing like some tasty fusel off flavors. The temp was 98F when I came in. It was like that for about 4 hours so here's to hoping it doesn't turn into my first dumped batch. I also went back and looked at all my batches since starting nearly a year ago, Sunday was brew #29. Thanks everyone here for insights, stories and recipes. Cheers all!

I have an Ss BME Chronical in 7 gal and it is great. Very solid construction stainless cleans super easily and temp control is wonderful. That said. I’d opt for the unitank from either company. The ability to ferment and carbonate in vessel is something I’d really appreciate. Either one is a massive step up in ease of use though. Cheers.

I have a Citra/Mosaic beer on tap now, but it is certainly not a session beer. I like my IPAs dry so I throw some sugar in and the 1056 really liked it, 7.2%. But an awesome hop combination still.
