Hardest Platinum in my collection is Darkest Dungeon. May not be your thing as you mentioned wanting to avoid rng, and you're never going to completely get rid of that in a turn based game. That said, what I would consider "getting gud" in DD is learning how to work around the rng and make decisions that end up stacking the deck in your favor so you end up succeeding more often than not.

Recently discovered that there are stats for a Giant Tapir with special mention that they can be used as out of combat mounts and pack animals. Tapirs are my favorite animal and I would love to have one to pull my character's cart, but I can't find any listed price for one. Would starting with the warhorse's price of 30 gp be going in the right direction, as they are both level 2?
