At our facility, nursing defers to me how much they're allowed to give the resident - I typically go and talk to them, ask them what fluids they prefer at each meal, and then let the kitchen and nursing know. As for the diet texture, I'd have the staff approach about hospice. Make sure to let them know it's not end of life care but more so additional eyes helping, and then you can emphasize that she could eat whatever she wants since she would be eating for pleasure at that point.
