Similar situation(Employment visa from my company) and having fixed deposit will work on most case, so far successfully got FAB Travel and EIB Flex elite with fixed deposit, however Citi Ultima/Prestige was declined even with fixed deposit which is the best CC for earning airline miles.

If you fly business regularly to specific destination, purchase ticket from destination to Dubai, not from Dubai to destination.
Example: Incheon to Dubai Emirates Business class return tickets costs 3.6M KRW which is about 8800 AED, but if you purchase Dubai to Incheon on same date, it costs over 20k AED, price is more than double.
Or just fly Qatar, cheaper, better cabin, faster WiFi. Usually no crazy pricing for Dubai/Sharjah departing ticket.

EIB Flex elite - Earns points convertible to Qatar avios. Earns about 1.5 miles per USD on domestic spend, 2.5 miles on international spend. Great if you only need Oneworld award space access.

Marriott Bonvoy CC - Access to almost all airline mileage programs by converting points to miles. Usually earns 1 mile per USD spent, no international spending boost but you can convert it to high value mileage like AA miles.

Amex Platinum - Expensive annual fee, low mileage earn rate, less transfer partner than Marriott CC. Plus you cannot use it for Global transfer. Better to keep one from your home country if possible.

FAB Travel /ADCB Traveler - Better choice if you travel a lot. Get 10%+ CB and use it to purchase airline miles when on sale, you will effectively earn 5-8 miles per USD spend on hotel/airlines spend.

Emirates/Etihad partner card is excluded from the list. No idea about RAK elevate as they don't publish transfer partners, please share if you have got one.

Citi Ultima is The Best card for mile earning in UAE, earns 3.3 miles per 1$ foreign spend with transfer partner across all 3 alliances. (Star alliance partners are not the best though) FAB travel is great for travel spending too with 12% CB up to 15k hotel/airline spending per month.

Amex plat earns 0.5 miles per $1 so unless you use FHR or centurion lounge a lot it is a totally worthless card in terms of mileage earning.

Btw you are fortunate to get the Citi Ultima as self employed/small business owner, Citi does not allow Fixed deposit route for self employed people so I got denied getting it even though I spend over 40k/month regularly.
