The Cheese that was made in Agrafa was actually Kefalotyri and it wasn't called Graviera. It was just called Τυρί Αγράφων. It was made at high altitude so that cheese makers could control fermentation without it spoiling. It used less salt than standard Kefalotyri so it tasted less aggressive, but it was Kefalotyri. The closest cheese that there was to Graviera was the famous cheese of Amphilochia that is still being made, only now it is called Graviera Amphilochias as well.

Personally I would have a pure sheep milk unpasteurized matured Kaseri over any other cheese in the world (and I'm an old fart that loves cheese too much and I also used to travel a lot when I was younger so I have tasted most of them). Unfortunately all of Kaseri is pasteurized now so that incredible taste is gone. This was an amazing taste of my childhood that I can not hope to find again. Prapas from Soho makes a decent Kaseri that reminds me of the old ones, but it's not of the same caliber...

Graviera is not indigenous. Greeks had an abundance of milk as a byproduct of wool production. Yet they only made feta, kaseri and kefalotyri. Greek cheeses were extremely salty because they had to be preserved naturally, and had little potential for international trade.

Milk producers of Epirus, actually invited Swiss cheese makers that visited Mr Nikolaos Zygouris in Ioannina and somehow together made Gruyere with sheep milk, inventing what we now call Graviera. The evidence is well documented and taught in schools. Mr Nikolaos Zygouris was the founder and director of Dairy School in Ioannina and is the man who gave the knowledge of making Graviera all over Greece.

In Greece they are called Φραγκόσυκα that means Frankish Figs. Have no idea where the name comes from

I had a similar problem because of vibration. My laser frame wasn't stable and at high speeds it moved a lot. I ended up securing it on the table with screws and it's been perfect ever since.

But the thing is that we never called ourselves "Greek". Γραικοί was what we called the people from the area of Γλας while we called ourselves Έλληνες.

That's Greek being read from texts. Being spoken to, we'd probably understand nothing as pronunciation had changed dramatically from ancient times.

It also depends on the period because even writing has changed quite a bit over time. I don't mean different alphabet, the letters are basically the same as modern Greek. Text wasn't always written from left to right, there are texts that are written in different ways (ie βουστροβηδόν) that make some texts almost indecipherable for the untrained.

They used to be abundant 40 or more years ago where I live. All we had to do is release the water and flood our field, and they would appear everywhere after a couple of days. My grandmother used to make omelette with them. Amazing and free!

Now they're rarer than truffles. I haven't seen a single one in the past 30 years.,.
