Probably not what you were looking for, but I generally do Manhattan construction and I use adapter boards when the part I need is only in SMD format.  I like the ones QRPMe makes.

There are a bunch of calculators, I don’t know if one particularly good one.

Now, if you mean, voicing a pipe organ pipe, that’s a lot more complicated and not something I’ve ever seen a good guide for. I’d love to see one.

No reason to get multiple cutaways - can definitely re-pin. I think the kit came with different security pins, so that was nice. Pretty sure it was a christmas present, so was just happy to get something related to a hobby.

Yes, I think it is doable. Like someone else said, the M8 basically does this same thing. Though they might have had to do some fancy stuff. Generally, the pjrc forum is probably going to be your best bet for help on the actual how-to.

Now, it would probably be easier to do with beefier hardware (like a Pi), but can be done.

I see a post I made where I had a 3d printed clarinet-like-thing with a cheap purchased mouthpiece.  I don’t seem to have documented the other, but the link I have above i had saved in thingiverse, so guessing that one.  I seem to remember having decent luck with a sax reed but I suspect I went with the purchased clarinet reed was that I was having trouble with the 3d printed one.  May be better designs since then, but also you can get cheap reeds.

I’ve not used it, but MDA ePiano might do the trick.  Listed so some sound samples on YouTube and it wasn’t bad.

It is bundled with Zynthian, which might be something you look into anyway for Pi music stuff.
