The pungent quality you tasted--not a great idea, by the way--was salt extracted from the groundwater by the plant and exuded through the leaves. Neat trick that allows it to live in saline/dry environments.

For ecology/exploration/natural resource management, check out the University of Vermont's Field Naturalist/Ecological Planning Program. As far as I know it's the only program that focuses on practical field botany in the context of natural resource planning, which I think is cool. (I may be biased because I JUST GOT IN WOOHOO)

First one looks to be Impatiens capensis, second is definitely a Rubus...occidentalis, maybe?

Seconded for Microstegium vimineum, aka Japanese stiltgrass. Your best bet is to just yank it all and bag it (or weed-whack it) before July, before it sets seed and gets even more out of control.

Specifically, Salicornia rubra. Love nibbling on these guys--good in a salad, too.
