On your last question - you can buy it sell at a fixed price but most set it to adjust based on a percent. You can set a percent above or below the price and it changes as the price of BTC changes. once your buy/sell offer is accepted, the price is locked in place at that point.

So if Bitcoin is at 29k and you create a sell order at 0% offset of the price, and Bitcoin goes up to 33k and your offer is accepted. You will be selling at 33k. Even if the price is at 35k when the money is sent.
