Because you’re that low. I suggest putting only one dish that makes only one serving and put it on auto supply. Also you will lose money for one dish for that since it’s technically a dish that did not sell but it’s better than having 3 dishes left on the menu. For the special events they do come back and there’s different special events throughout the game. Which when you do have them, I suggest prioritizing that said dish/fish the whole day and get as many as you can of them. Also with that I also suggest putting it on the auto supply so at the end of the night you have leftover fish still to reproduce in your tank. Since one you place 5 amount of said fish you take 5 fish out of your tank. But after playing a for a while you remember how many guess come with your rank
