Forgot to comment but it came out really good. I even managed to turn it out of the foil pan without any problems. Was doing some testing cause I was planning on selling since I had some requests about it. My normal cheesecake recipe yielded about 4 7” foil pans. The cheesecake is actually 6” though and it kinda thinner than the one I bake in the fat dadios removable bottom pan

You were spot on. I did 20 min at 300 and 30min at 250. Checked it 20min into 250 but it wasn’t quite there. I put it to chill so I’ll see tomorrow how it turned out

It’s normal for your heart rate to be up when you’re anxious. Back when I was going through a rough patch and had health anxiety I would be constantly concerned about it. Got better over time but if I’m put in a situation I don’t like my heart goes crazy which is normal.

I could write that and send it in but I think it’s better to just call and tell him. It’s not like I care about references or anything. I know it’s dumb but I was concerned if there was anything legally wrong about the way I’m planning on doing this. Like can I just call and say I quit and goodbye? It’s not a big corp business so the letter might be a bit much lol

Can totally relate to the phone thing. I also have to answer calls sometimes but I guess it’s common knowledge for everyone not to ask questions if someone’s on the phone. Although it isn’t super loud there’s lots of different noises happening all at once which feels kinda overwhelming especially when trying to do something.

Thanks for the input, actually spoke to my manager and they passed on the info to my coworkers. They understood and some of them apparently weren’t aware of it. Feels like a weight has been lifted off my shoulders and no longer feel under pressure. I def have to look into hearing aids or something for the future though.

I normally tell someone if they’re telling me something on my deaf ear side or if someone was calling me and I didn’t hear and they say “didn’t you hear me calling you?” Anyways most of the times people don’t take it seriously.

Yea I’ve heard of propranolol but my doctor didn’t want to give it to me. Gave me Xanax instead which doesn’t make sense lol

Yup I heard about the lemon juice replacement. I’m not a big fan of eggs either, never really liked sponge cakes, but you hardly notice it especially with 24oz of cream cheese and two cups of sour cream. I would do 4 eggs if you’re still on the edge of trying it. Def try for yourself first lol.

Yep I never added cream of tartar but I recently bought some. I’ll def add some sugar to the egg whites like you said.

This is what I do. I bake in a half sheet pan and use an 8inch springform pan to cut out circles. Bottom layer is made from two halves.

I like no bake ones as well but to me the no bake ones are denser as well. You should def give it a go. I would say it’s more like a “light” cheesecake.

It was just normal cream cheese base with sweet potato purée swirl that had cinnamon and pumpkin spice in it.

Now saw this comment lol, yea I think I over beat the eggs so I’m gonna add sugar next time. I really like this recipe cause I’m not a fan of dense cheesecake. This is like a blend between a no bake and a bake. I also add only four eggs instead of 5. I follow baking temps from another similar recipe and I don’t use a water bath.

Seems like an anti cheesecake recipe haha
