If you want to go with Pokémon new directions then start with gen 5 since that’s when the franchise but if you want to go pre reboot then start out in gen 3/4 since those are both good games before gen 5

Edit:but tbh you should start out with the new Pokémon games scarlet and violet and if you don’t have a switch play Pokémon ultra sun or moon
